Christmas! For my family, this means that the days leading to December 25th are full of baking! We like to make cookies (and other goodies) to enjoy; but also to give away to friends, family, co-workers, and neighbors. That’s how we roll.
I first had snowball cookies over fifteen years ago when my friend Michelle made them. They are pure “melt in your mouth” goodness. I wanted to adapt her original recipe in order to make gluten free snowball cookies.
I am very happy to report that this gluten free version worked like a charm, and my family was none the wiser about the lack of gluten. They could not tell the difference.
Snowball cookies are also known by many other names: Russian tea cookies and Mexican wedding cookies are two of the most common titles.
Notes and Tips
I used almond flour rather than the more traditional pecan flour. I did so for two reasons: 1) I had almond flour on hand and 2) it is quite a bit cheaper than pecan flour.
In all honesty, pecans are more flavorful, so I added a 1/4 teaspoon of almond extract. I was quite pleased with the results: cheap and tasty.
You can use any nut flour and I would assume that you could use some sunflower flour as well, although I have yet to try it.
Gluten Free Snowball Cookies
Preheat your oven to 325 degrees Fahrenheit.
Take a bit of dough and roll between the palm of your hands until you have little balls (about one inch in diameter). Place each ball on an ungreased – or Silpat mat covered (my preferred choice) – cookie sheet.
Bake for 15 minutes.
While the snowball cookies are still warm, roll them into the powdered sugar.
Note: I use a small Ziploc bag for this purpose. I place the sugar in the bag and a couple of snowballs at a time. I gently roll them in the sugar. When there are well coated, I place them on a dish.
They are quite crumbly out of the oven, so be very cautious.
Yields about 3 1/2 dozen gluten free snowball cookies.
