Before I share this recipe for flourless peanut butter cookies, I need to thank my husband who shared his cookie recipe with me. I baked them for a picnic date with my “baby” boys (nine-year-old twins who might resent being called “babies”).
We playfully refer to these simple cookies as firefighter cookies. My husband – who is a firefighter – likes to whip up a batch of these grain free cookies for the guys at the station (who devour them). There are only two gluten free guys on shift but as long as the food taste good the others are fine being gluten free along with them.
This recipe is not my own and I have no clue where my husband got it. My only contribution to this cookie recipe is in the one ingredient I added, namely the vanilla extract.
These flourless peanut butter cookies are grain free and dairy free. They are super easy and only require four ingredients (three if you leave the vanilla out).
I was able to bake a batch in about a half hour and I had two kiddos “helping” me. Alone, I could probably get them done in a tad less time but this wouldn’t be nearly as much fun.
Notes and Tips
When making my cookies, I use natural peanut butter because it happens to be what I have on hand. I have never asked my hubs what he uses at the station but my guess is it’s regular peanut butter.
You can substitute any nut or seed butter in place of the peanut butter. I have used cashew and almond butter in the past.
I also use an organic natural sugar rather than white granulated sugar.
If you are making them with kids and you want a tad more pizzas, you can add some mini chocolate chips to the batter or some colorful sprinkles on top.

Flourless Peanut Butter Cookies
Preheat your oven to 350 degrees Fahrenheit ( or 180 Celsius).
Line a cookie sheet with a Silpat mat (or grease it). My preferred method is to use my Silpat mat, I LOVE that thing.
In a large bowl, place the peanut butter and sugar and mix. I use my stand mixer or a hand mixer for this process. This cookie batter is pretty thick and mixing it by hand requires some heavy muscle power.
Add the egg and the vanilla extract (if using) and again, mix to combine.
When all the ingredients are well incorporated, roll a bit of batter into balls: 1 inch to 1 1/4 inches in diameter (about 3 centimeters).
Place onto your prepared cookie sheet.
Gently flattened each cookie by hand and make a “fancy” design with the backside of a fork.
Bake for 12 to 16 minutes.
Let them cool for five to ten minutes before gently moving them onto a plate.
When totally cooled, and if you have any left by that time, store in an airtight container.
Makes 18 flourless peanut butter cookies.
